Wine-making techniques: Long-lasting maceration on the lees with intense pumping over and punching in the first stage, followed by a very long-lasting static quiescent final stage. Temperature is controlled up to a maximum of 33° C.
Ageing: 36 months in wood (40% in 25hl Slavonian oak barrels, 60% in small French oak barrels)
Bottle ageing: 8 months minimum
