“Akméniné” is an uncompromising wine, or you love it or hate it: only sauvignon from limestone and old vineyards keeps a typical smoky note, but this is the only feature that makes it similar to other Sancerre. Very low yield, light grazing surmature, followed by a clever maceration on the skins that smells the varietal character. After fermentation the slow aging on barrique yeasts, used for 8 to 15 years, creates a harmony between mineral sharpness and creaminess. The orange wine according to Sébastien Riffault.
