The “Millocchio Rosso” comes from the old vineyards of the Millocchio vineyards. It is an assemblage of the separate fermentation of Alicante, Sangiovese and Ciliegiolo grapes, done by following the philosophy of natural wine: spontaneous fermentation with wild yeasts, long maceration on the skins, very low levels of sulfur, no substances added and no filtration. After racking and a gentle pressing, the wines are aged in 500 liter regenerated oak barrels. In spring, the wines are assembled and put back in the barrels until bottling in the following autumn. The bottles are aged for six months before commercialization. The “Millocchio Red” is a wine rich in aromas and flavors.
